This isn't necessarily proof, but in season 3 episode 1 Morty and Summer go back to the original dimension. While there, the original Jerry destroys their portal gun and members from the citidale of Rick appear and start to freeze the rest of the family. Suddenly Morty screams out "I'm Morty from earth dimension C-137"; now the Ricks were about to freeze him as well and stop when he says this. So the Ricks originally thought he was from the universe they are in currently and change their mind when they think he is a Morty from universe C-137. This likely indicates that not only is the new universe is C-137, but also that Rick and Morty are likely hiding the fact that they replaced other Ricks and Mortys even to the Council of Ricks. After rewatching they actually show up because the portal gun of Rick C-137 was destroyed, the portal gun obviously being the dead Ricks', and dont shoot morty when he claims to be the Morty of the Rick who owned the portal gun which was just destroyed... so basically yeah the universe that we are in currently is C-137.
